Scammed $5000 for not knowing what "Arbitration" means in the contract. - Food

Bill(William) Dillon who owns Cafe Soleil together with Stacey (his girl friend), scammed us $5000 and used it to renovate his restaurant. The restaurant is located at

He convinced us that on top of the Cafe Soleil, he has owned a Solar Panels business for 6 years and he would like to expand the territories to other states. He had a website, contract and everything looking so real. In the contract he had "Arbitration" clause.
He apparently, did not have a Solar Panels business. After a few months of giving us a run around, we asked for our money back at the contract stated. We gave him a surprise visit at his restaurant and we cancelled the contract. Little did we know that since the contract had arbitration clause in it, it was basically impossible for us to get our money back. We have contacted all kinds of lawyers who had the same response that, unless we have hundred of thousands of dollars to spend on this case, we might as well forget the $5000.
